I love deep fried pizza: I can not lie, when I was a kid I still remember that it was like a big celebration when my mum made it. Usually it happened when I got a good mark at school. So, It didn’t happen so frequently as you can imagine… Deep fried pizza is something very popular in Italy. Unforgettable was the movie “L’Oro di Napoli” (The Gold of Naples) where Sofia Loren was making those “pizzelle” and meanwhile having an “affair” with one of her customer. The recipe is very simple as many other in the italian cuisine. What you really need is a good pizza dough, a tomato sauce (a pummarola), some fresh mozzarella cheese  and few basil leafs. You can also add other ingredients: here, in Canada, for example, I always sprinkle some Parmigiano Reggiano on top to give an extra flavour to the mozzarella which here is not so tasty compared to the italian one.


For the pizza dough:

1/2 kg bread flour

15 grams of salt

3 tbsp oil

1 tbsp sugar

15 grams of fresh yeast


Melt the yeast in a big cup with half cup of warm water. Meanwhile take the flour, make a hole in the middle and pour the yeast melted in the water and the sugar. Apart, take another half cup of water and add the salt and the oil and gently add to the other dough. Knead the dough with your hands and finally put it in a container and place it in the oven without turning it on. Let it rise until it will double its volume. It will take around 1 1/2 hour.
