I have to tell you something: I go crazy for breaded pan fried bocconcini. When I came here the first time in Toronto, I was very surprised that no grocery store was selling them. In Italy you can find these delicious appetizers in the frozen section already made and ready to be fried at home. We call them “mozzarelline impanate” and they are a must at my family table when I come back home for holidays. So I decided to find a way to make them here in Canada and finally I made it. To make a very delicious breaded-pan fried bocconcini you just have to follow few simple steps to achieve the perfect crispiness outside.
400 grams of bocconcini
Seasoned Italian bread crumbs
2 eggs, whisked in a medium bowl
5 tbsp of flour
salt to season
vegetable oil for pan frying
Coat the bocconcini in some flour ,then place them into whisked egg mixture to coat evenly.
Next, dip each bocconcini ball into a bowl of Panko and Breadcrumbs, pressing gently to make sure each bocconcini is well coated. place in a large flat dish and put in the freezer for 20 minutes.
Pour about 1inch of vegetable oil in a frying pan, heat to medium high, place bocconcini balls in oil carefully and allow to fry, turning gently until a light golden brown colour appears. Remove from oil and drain on paper towels, season with some salt to taste and enjoy!!
